You can keep it in the fridge for up to 3 days, but I haven’t tried it myself to know how pliable it is to work with.

Thanks Lindsey! I haven’t made a zucchini bread as my kids would probably not eat it, but what about trying my blueberry banana bread and leaving out the blueberries in place of zucchini? Just a thought

This is a great recipe! I baked it in a smaller loaf pan 7″x4″ (50 mins.) made muffins in a standard size cupcake pan (22 mins. Bake time) and 10″ round bundt cake pan. (Approx 45-55 mins bake time). I substituted 1cup of the whole wheat flour for 1 1/2 cups ground almond meal ( found at Trader Joe’s and Whole foods) and used 1/2 cup variation of chocolate ganache instead of any cocoa ( 4oz choc chips & 1 tbsp soy milk). I glazed the bundt cake with a thinner version of the ganache (double the milk as above) and gave it as a gift -they loved it!! Thanks for the recipe!
