My husband of 27 years found out he had T1 diabetes 3 years ago. What a life style change for us! Since then we have done a 180 on our eating style. We used to eat mostly prepackaged, highly processed foods, little to no fresh vegetables or fruits. Ate out a lot. At 48 years old I would say I didn’t know how to cook! That all changed with his diagnosis. It’s funny how a crisis can truly change your life for the better. We are still learning what affects him and I’m still researching better ways to prepare food. I feel it will be a lifelong journey.
Back to why I love you – you have taken comfort foods, removed the white sugar and it is still edible! Not many recipes I’ve come across do that. Thank you for your determination in making recipes that are beyond tasty and healthy. I love your site and have gotten your cookbook. They have become my go to resources!
