Have you tried this using a lower carb flour?
Beef stroganoff taste is one thing I really miss on low carb.! I’ve been eating this way off and on for years and feel so much better! Otherwise is it the onion and mushrooms that are adding the carbs?

grated Parmesan is always a good option
