Just made this tonight. While the components go well together, the amount of effort isn’t worth it. Next time I’ll pan or air fry the zuchinni and then top with shredded cheese and bacon. Good concept.

In reply to Brenda. Brenda, I'm so sorry...I didn't get a notification that you had replied :( I assembled them then transferred them to my basket in my air fryer. Spritzed them with some avocado oil & sprinkled with garlic powder and some crushed red peppers. Air fried them on 370 for about 6 mins then on 380 for another 5-7 mins depending on the texture you want for the zucchini. So good!!

Amazing recipe!!!!! I’m not a big zucchini fan but hubby loved these!!! And they were super quick to make in the air fryer! THanks for sharing all your great low carb recipes, they’ve been lifesavers on our Keto journey 😀

Genius! My husband is picky about zucchini dishes, so I’m always on the lookout for recipes he might like… I think this one might just be a winner. I’m totally on board with the fact that almost everything is better with melty cheese and crispy bacon, and zucchini is definitely no exception to that rule!
