Just made this and loved the recipe (with a few changes). I didn't have applesauce or greek yogurt on hand and I was looking to use up some cottage cheese. I substituted cottage cheese and sour cream for the yogurt, and added maple syrup for the touch of sweetness I was missing from the applesauce. Then I added curried cashews that I happened to have and used quinoa instead of rice. I'm very pleased that I will be eating these leftovers for a few days. This dish is delish!

I made this yesterday... gotta tell you I tasted as I went along and wasn't impressed.. then tasted after it came off the stove.. again, not so impressed but didn't want to waste it. So today I took it for lunch thinking if I still didn't like it I could always eat in the cafeteria... BUT OH MY STARS!! It just needed to sit in the fridge for the flavors to really develop because it was scrumptious! Thanks so much for the recipe!!

Shoot. No Whole Foods here. I'd really love to try it, as I've seen it in a lot of your recipes. I'll maybe buy online. Thank you!

hmmm, I've found it at Whole Foods, but you could use regular whole wheat flour or a gluten free flour or whatever flour you have on hand.

And I may make it with quinoa...simply because it's the grain I use most frequently!

Chicken curry, or curry chicken, is a much-loved dish all over the world and is a great way to use boneless chicken. There are lots of different kinds of chicken curry dishes including Indian, Thai , Chinese and more. Curry can be a lot of fun to experiment with and you can vary the balance of spices or try different spices. You can use different meats or vegetables or add fruit and nuts if you want.
