					<description><![CDATA[I had an abundant amount of cottage cheese to use. I went to Brenda&#039;s new cookbook Good, Better, Best. I was thrilled to see how many recipes used Cottage cheese. The easiest one appeared to be the cottage cheese waffles. I had all the ingredients on hand. I also use a four waffle mini Dash cooker. I had almost the amount of whey protein powder mentioned in the recipe the rest was equip beef protein powder. Since the amount of time to cook the waffles can vary upon the ingredients you used I used the middle of the road approach for 3 minutes. I knew I was in trouble when my Waffle iron lid wouldn&#039;t lift nicely. Alas my results were the same as many that have left reviews here. The Waffle split I had a massive cleanup to do. It&#039;s not like Brenda to put a recipe out that struggles so badly. I&#039;m here to say I believe I found the reason it has failed for so many. I know this is a long post but I&#039;ve been following Brenda for well over 3 years and I think it deserves the time to explain. I began thinking about Brenda&#039;s 90 sec cottage cheese English  muffin. If you mix up that batter too much you won&#039;t get the nice nooks and crannies left by the Cottage cheese curds. That got me to thinking. When I made these waffles I used my immersion blender and blended the ingredients. Today I gave the recipe another shot using my single Dash waffle maker and cutting the recipe, 1 egg, 1/4 cup cottage cheese &#038; 2 Tbsp protein powder. I didn&#039;t want to waste the ingredients again. This time I gently blended the ingredients with a whisk, leaving the curds of cottage cheese visible. The protein powder I used was Equip peanut butter flavor. I added a bit of stevia glycerate for extra sweetness. I oiled my single-waffle iron and cooked for three minutes. After 3 minutes I attempted to lift the lid and it did not release. I used a non-stick spatula to help the lid lift without damaging the waffle. It was a success,  looking exactly like the picture in Brenda&#039;s book. It was hardly dry as my previous attempt and the comments of other people here loo. It was extra moist actually. I like the nutritional value of this recipe and I will be trying it more in the future to find the right cooking time on my Waffle iron. I do not think that the various protein powders used is the issue. I think it&#039;s that most of us mixed it up so we couldn&#039;t see the curds of the cottage cheese. I hope this helps.
