A simple summer recipe I love is a caprese flatbread pizza. Drizzle flatbread with extra virgin olive oil, top with fresh basil leaves, tomato, and sliced mozzarella and grill it. So good!

I use it to roast vegetables! Just toss the assorted vegetables (cauliflower is my fav!) in EVOO and roast at 400 degrees until browned! DELICIOUS!

I have recently join a Bountiful Basket coop and have been getting a fruit/veggie basket every Saturday. We have been getting lots of veggies that we have never eaten before. I have never had Kale before and of course had to search for some ideas. Here is one that I like alot.
Kale Chips
Wash kale, remove stems, tear into bite size pieces. Spin in salad spinner to remove all water. Lay in a single layer on a cookie sheet. Drizzle or spray with olive oil and sprinkle with sea salt. Bake at 350 for about 10 minutes…do not over bake, you want them crisp but not brown. Store in a sealed container. YUM! Great replacement for potato chips when you are watching what you eat.

We love dipping fresh homemade bread in olive oil and balsamic….so easy and so tasty!
Love EVOO with pomegranate balsamic vinegar on top of tomatoes and mozerella and fresh basil. you can even make them mini using grape tomatoes and mozerella balls on skewers.

I use olive oil to make Oven Fries. You can use this recipe w/ sweet potatoes as well. I prefer Yukon Gold. Slice unpeeled Yukon Gold Potatoes into wedges, toss into a plastic bag and add the following or really whatever your family likes. Season Salt, pepper, red pepper flakes, and dried parsley. Add enough evoo to coat. Close bag and shake until potatoes are well coated. Bake on cookie sheet in 400 degree oven for 30mins. These are wonderful and very verstile. Just add the spices your family loves on chicken or beef and bake. They turn out great every time and you can also cut potatoes smaller and just use salt and pepper to make a breakfast potato. Yummy!!

I love a massaged kale salad (I read about the recipe on another site). Rip up some raw kale, add a couple tablespoons of olive oil, and massage the oil into the leaves until they are slightly wilted. Add some chopped avocado to the mix, sprinkle with a dash of salt, and voila. It’s delicious!

OH MY…I’ve already done all but sharing this contest on my blog. We love EVOO and have been using it since the mid 90’s. Our very favorite is to have it with dipping spices and a nice, fresh, multi-grain baguette! Yum, what a treat, especially on a Friday or Saturday night when hubby and I are grilling alone! YUM!

Easy zucchini side:
Slice 2 small zucchini into 1/2 inch thick slices.
Toss with 1 Tablespoon of EVOO
Place in a glass baking dish.
Sprinkle with garlic salt, pepper, and SHREDDED Parmesan cheese. Not a lot, just about 1/4 cup.
Bake for 20-30 minutes at 350.
Plenty of time to finish dinner while its in the oven!

I am a major EVOO lover! I use it in nearly every dish I can, but my favorite way to use it is to drizzle it over fresh asparagus, sprinkle it with a little sea salt, and then roast it in the oven for 10 minutes at 425. YUM!

I use it for salad dressings, dipping bread and also like to drizzle it over vegetables ( potato, carrot, whole garlic cloves, parsnips) that have boiled to tender crisp, sprinkle with McCormick’s Perfect Pinch Vegetable and baked. It’s a family favorite.
