OOOO what a great giveaway! I would love that lovely bottle of EVOO. I love it for roasting veggies in the oven...asparagus in particular, but sweet taters and root veggies too.

I love to mix sliced cucumbers, tomatoes, chopped onions, finely diced garlic and drizzle EVOO over it.. add kosher salt & your fork. 🙂
