I'm on a very limited diet and if I had a pressure cooker, I would definitely cooks lots of whole, fresh chickens (skin removed) and vegetables. Right now I'm having to eat frozen chicken breasts which are packed with added salts and preservatives...yuck!

My mother had given me her canner a few years before she passed away in 1991. My father remarried in 1992 and his wife wanted to do some canning so Dad called and asked if I'd loan them the cooker Mom had given me. Of course I said yes. After a couple months had gone by, I called to get the pressure cooker back and his wife informed me that she was keeping it because it was Dad's money that paid for it. Needless to say I asked several times if she was done with it and she always said no, so when she passed away in the early 2000s, it went to her children. Her children inherited EVERYTHING my dad and mom worked for during their 50 odd yr of marriage. Sorry to have had things turn out the way they did.

Friends always wondered how I did it! How did I work an 8 hour day and come home to a hungry family and feed them a home cooked Beefstew. Well, I did it in a pressure cooker! And the time it took me to make it, was as long as it took the family to set the table and wash their hands! 20 minutes! Believe me, and if you don't; I'll share my beefstew recipe with you anytime you need to look like a mother who stood over the stove all day cooking! Hahahah! I would love 6 pressure cookers in my kitchen!
