In reply to MacKenzie. The gluten found in wheat flour is what helps it stick together but when gluten is removed for gluten free baking the xanthan gum provides that "stickiness" to hold the dough together and give it a better texture than without.

What purpose does the xanthan gum serve? Is there any way to make this recipe without it?
