Also have a picky eater, and he ate a whole piece without a fight. Hubby ate 2 huge pieces! Another winner!!!!!

I made this tonight and it was SO GREAT! I added some black beans and corn, and instead of ricotta i mixed mozzarella, sour cream, and parmesan cheese. it turns out great! thanks so much for the recipe idea!!

I do think my kids would gobble this up too! Thanks for the inspiration! I love lasagna and also mexican food…..so this would be right up my alley 🙂
