I am also a foodie with a creative flair, so hard for me to stick to the written recipe.  My daughter and I are in week 3 with you all, thouroughly enjoying this experience of sugar and gluten free.  We both have big issues with portion control.]]></description>

					<description><![CDATA[This recipe looks so easy with ingredients that I am actually familiar with! Can&#039;t wait to try it! I think I have stumbled upon the right website and I am so excited to try all these nutritious recipes :) I am actually not a mom *embarassed* but a 16 year old trying to lose fat hehe. I have changed my lifestyle and am always looking for healthy, nutritious recipes because I have realized I often consume too much, unnecessary sugar/fat/carbs. I have realized they are a part of a balanced diet and shouldn&#039;t be totally cut out but should not be in excess so these pancakes look amazing :) Just want to clear up one thing since you seem super knowledgeable: is cottage cheese/ricotta actually healthy? I don&#039;t eat wheat and have been searching for a recipe I could use for pancakes. I used gluten free oats and they are so good! Couldn&#039;t be any quicker either. They are plenty sweet with the stevia. I ate them as is (left out the berries and put those in the side because I don&#039;t care for hot fruit).
