Hey there, I have the cloud bread with the farmers cheese in the oven and everything looks like it’s going as planned. My question is in previous cloud bed recipes I’ve made through the years it has mentioned folding in the egg whites very carefully as to not ruin the air that has collected up in the egg whites. However, your recipe doesn’t say that- it just says to fold in a bit at a time. I’m always afraid that I’m gonna fold too much and too hard and then my bread won’t rise. Do you recommend folding very carefully or because of the baking soda, one doesn’t have to worry so much about the folding in particular?

I have used found farmers cheese where I live so I haven't tested it myself but if you have used it on other cloud bread recipes I would think this will work too. please let me know how it goes for you. Is the texture of farmers cheese like ricotta?

I made it and it’s awesome! I didn’t alter the ingredients, but altered the method. Instead of separating the eggs, I beat the whole eggs to 6-8 times volume, then whipped in the cottage cheese, then whipped in the dry ingredients. I’ve found that whipping the whole eggs leads to less deflation that you get from whipping the whites separately. My bread rose to be 2 inches above the pan like normal bread, and is not as much like meringue as normal cloud bread. A tip if you want to beat the whole eggs, warm them up in hot tap water for 5-10 minutes before beating, they beat up faster and fluffier.

Thank you Brenda for a great recipe!

Maybe look into tahini bread?
Many versions out there with few, simple low carb ingredients. Just don’t call it a cloud bread. I’ve never tried tahini bread with the egg whites whipped. So maybe it will be less dense that way. Find a recipe, cut it in half, and have fun experimenting 😊
Good luck!
