This looks really good! It can easily be made vegetarian, which is great. 😊 We use organic black soybeans, which are low carb and have good fiber. We also use plant based crumbles to replace meat.

Brenda, I want to use Rotel in the Taco Soup. Should I replace the canned chop tomatoes for the Rotel or just add the Rotel to the recipe and leave the chopped canned tomatoes as directed? Thanks, Teressa P.S. I am making this tonight. 10/28/21.
