The ½ teaspoon of baking soda per 1½ pounds of chicken is a classic tenderizing technique that usually softens the meat without affecting the flavor.

If you prefer, you can skip the baking soda completely—the recipe still works well without it, since the crispy coating comes from the egg and whey protein step, not from the baking soda.

I’m so sorry to hear this recipe didn’t work out for you. The ½ teaspoon of baking soda per 1½ pounds of chicken is a classic tenderizing technique that usually softens the meat without affecting the flavor. I’ve had many readers say it gave them perfectly tender chicken, but I also know some people are more sensitive to baking soda’s taste. If it isn’t evenly distributed, a bite or two could end up tasting off.

If you prefer, you can skip the baking soda completely—the recipe still works well without it, since the crispy coating comes from the egg and whey protein step, not from the baking soda. I truly appreciate your feedback, and I’ll add a note in the recipe so others know it’s optional.

I agree that baking soda is not the best way to go. I was so excited to try this recipe. One bite and my husband and I spit it out. In 40 years of marriage I don’t think that has ever happened.

Hi Brenda.

The ingredients list Olive oil, but the instructions say to saute chicken in sesame oil.

Should I saute in Olive oil or sesame oil?

Brenda, I made this for date night with my husband last night and it was REALLY good! I was a bit worried about the baking soda after reading a negative review, but decided to go for it anyway and doubled the amount of baking soda because I made a double batch of the stir fry. It really did tenderize the chicken and did NOT make the flavor bad at all- makes me wonder what went wrong for the other person.

I added veggies and fish sauce to the stir fry and didn't bother serving over any sort of rice. It was excellent. It doesn't remind me of General Tso chicken per se, probably because it isn't sweet, but it's very good in its own right. This is one of my favorite stir fries I have made.

oh it sounded so good. Likely my error, but I was increasing the chicken amount, so I increased the baking soda. inedible. I should have read the disclaimers on many sites about using baking soda soooo slightly. and just the couple bites I tested ended up giving me gas! so strange
nothing against you, Brenda...I did your 5 day reset and am successfully 3 weeks booze and sugar free!
