YUMMMM!!! We were snowed in for several days so I’ve been on a cooking spree. The only change I made was to sub a can of corned beef for the pastrami. This recipe is AWESOME!!! The flavors are so good. This will definitely be on repeat. Even better reheated for lunch the next day : )

I’m confused, there is no Pastrami in the meatballs or the casserole? Am I missing something?

Just made this recipe…Hubby loves Reuben sandwiches and I was looking for a healthier version.We were both disappointed in the taste combination…the meatballs were delicious and I could easily use them in another recipe setting…however, the cauliflower and sauerkraut combo received a thumbs down from everyone. Also Swiss cheese doesn’t melt well…really disappointed overall.

Holy Smokes! This looks amazing! I also didn’t grow up with Reubens – in fact, I was well in my 20s when I had my first Reuben Sandwich! Good thing you caught Rachel that day so now we can all enjoy this amazing low-carb Reuben style casserole!!

I love the idea of mixing mashed cauliflower with sauerkraut! Brilliant. Cauliflower is such a workhorse when it comes to recipes. Now I’ll have to try mixing it with my kraut!

Every once in a while, we will go to a local deli and I oftentimes order a reuben…I’m not sure why, because I didn’t grow up eating them. I think it’s the sauerkraut and the dressing! What a fun spin on a reuben and great way to get in some cauliflower for the kids!
