Hello, I wanted to report back because I asked you for a replacement for the protein powder and you suggested egg white protein powder, which is what I used. It worked beautifully! This is still the melt in your mouth perfect texture as you described.

I need to work on the level of sweetness for our taste. I am used to using Allulose with another sweetener such as Stevia or pure monk fruit for balance. I usually don’t like desserts that are just all one low carb sweetener.

I’m still at the point where I like things on the sweet side and I kept adding coconut Stevia plus a tiny bit of powdered 100% monk fruit, but I got some aftertaste in the final product because I believe I added too much trying to get to the perfect sweetness balance for me.

Either way, it’s absolutely delicious and it’s all about the texture! So darn good. Thank you Brenda!

Bonjour!

How about liquid monk fruit extract? That’s what I usually use, because like you, I can’t stand the stevia aftertaste.

Just made this today, and it turned out really nice! I can't use Jay Robb's egg protein powder because the Xylitol it's sweetened with gives me severe bubble gut. I subbed the exact same amount of plain egg white protein powder, and added extra vanilla and powdered Lakanto to make up for the sweetener and vanilla in the Jay Robb. It turned out very smooth and delicious. I tasted the mix before and after I added the Lakanto, and didn't notice any texture change. I think the key is that I used powdered sweetener, not the regular stuff. So for all the stevia haters, or any others like me that can't do Xylitol, that might be a good option.
