I absolutely love love lemon. however, I absolutely detest coconut. the texture and the flavor. was very bummed when I saw that the coconut was included in not not only the balls themselves but also the outer coating. can I just leave it out completely? I don’t mind the coconut oil or the coconut milk, but the shredded coconut no way.

I haven’t used coconut cream before. If I buy a can of coconut cream, how do I store the rest of the can when I use only 2 Ts of it? Will it keep in the fridge or freezer until I need it for another recipe? Thanks!

Thank you for this wonderful recipe! I love them!! I didn’t have lemon stevia, and I don’t like stevia, so I just added more lemon juice, and Splenda.
I forgot to leave the coconut milk out to make coconut cream, so I just scooped out some of the more solid parts of the coconut milk to use. They came out a bit too soft to roll, so I put them in the freezer for a while and that did the trick. Much easier to roll. They taste so great!

Wondering out loud here…what consistency is the coconut cream? Do you think substituting with real cream make the batter too thin?

In reply to Lovisa. The "cream" is the top thick part that occurs naturally and you find in a canned coconut milk. Not sure you can make that yourself.
