					<description><![CDATA[Thanks for this recipe. I&#039;ve used it for years, sometimes weekly because my kids love these and I love how easy it is to keep a healthy breakfast/snack on hand. The recipe is so forgiving - I just use what I have. I&#039;ve substituted mashed butternut for the applesauce, and oh my! so good. I usually add choc chips to the whole batch, scoop 12 muffins out for the kids, and then add my mix-ins (berries, nuts, pepitas, etc) and pour the rest into an 8x8. I consistently get 24-27 muffins per batch. No idea how you only get 18. But, all the more for me! Thanks again.]]></description>
