Looked cute, but all I can taste is sunflower seed flour. I added more gingerbread spices, more xylitol, and more stevia than written in the recipe. It was still wet and sticky even after two hours in the fridge, so I added more coconut flour and powdered Pyure, keeping the ratios equal. I dusted my baking mat with the powdered Pyure to make cut outs. After further chilling, the dough was still too sticky to roll out. I gave up and threw it away. I was really hoping to like this recipe to move away from expensive almond flour. Any advice as to what went wrong?

Yes just use some additional ground cinnamon. If you have pure stevia extract I would only use a little maybe just 1/4 tsp, but if you have a blend that measures like sugar i would use 1/2 cup at least if not a little more.

Love sunflower seeds and I did not know baking soda turned them green. Sometimes you need a small amount of necessary evil. I'm glad your cookies showed no trace of sugar. They look adorable and soft!!
