My first Keto sugar free recipe! Very tasty and will make again. I ground the sunflower seeds in a coffee grinder at the most coarse grind and it came out pretty powdery. I have a full size food processor— will that give me a better result (not unhappy with current result but it is pretty cakey)? Also my very softened butter would not incorporate into the other ingredients. I tossed it and did it over with coconut oil. Any advice on what happened? TIA!

If you need it nut free, try sesame but if you can use almond flour you will need to increase to at least 1/2 cup since it's not quite as absorbent as coconut flour.

I really loved these cookies!! I had some rather coarse Bob's Red Mill almond flour that I used and gave it the right texture. I left out the vanilla stevia and added an extra 1/2 t of vanilla. They were so easy to scoop with the cookie scoop and didn't stick like most cookie recipes. My husband loved them as well and he is not low carb!
