In reply to <a href="https://www.sugarfreemom.com/recipes/sugar-free-strawberry-refrigerator-jam/comment-page-2/#comment-278991">Jennifer Farley</a>.

Hey Jennifer!!! If you're strawberries are pretty sweet on their own, no need to cook them. But if they aren't a very sweet batch, I would suggest cooking them down as the natural sugars definitely enhance the flavor. This recipe is hard not to mess up and I think you'll enjoy it both ways. Getting used to "less" sweet foods though is something of an acquired taste and does certainly take some time. Finding the right sugar free sweetener for your preference also has a bit of a learning curve. Let me know how it all goes for you!!

Hey lady! I just did a search for sugar-free jam and was so happy to find this. I'm very new to sugar-free living and am happy to turn to the experts. I love the chia seed idea. Question - have you ever tried cooking the strawberries a bit to see if it enhances the flavor? That's how I've always made jam so I'm tempted. But I love the idea of skipping that step, so I'm torn.

Sugar is always counted with carbs it is undersection of carbs. Is this a mistake? I have to watch for sugar because I am intolerant and can not all the arts of sugar.

Swerve is a great option. It is erythritol. Here's an article I wrote about it. https://www.sugarfreemom.com/recipes/what-is-erythritol-a-swerve-give-away/
