In reply to Heidi. I think strips of chicken can tend to dry out easier than the smaller pieces I'm using. Mine are not dry.

Hi, I have made chicken strips wrapped in bacon but my problem is the chicken was so dry and I could not make the bacon crispy. Is your chicken dry? I did not want to make it again cause I could not get the chiken juicy and the bacon crispy but your recipe looks so good but is the chicken dry? how do you combat that?

In reply to Mary Anderson. It's 2 pounds of chicken which is 32 ounces and divided by 8 servings is 4 ounces per serving. Not sure how many bites that will be, you'll have to weigh it.
