I cook sweet potatoes and freeze them for souffle. I also bake them and freeze them.

Looks wonderful. I sooo love sweet taters – musta been quite the deal to get 40# at once huh? =) I recently made a twice-baked sweet potato that was wonderful with cream cheese, but since yours are so large, that might not be very easy to do. Thanks for sharing. I’m going to check out those other sweet tater dishes as well.

There are definitely worse things than having too many sweet potatoes!! I love ’em, and your variation on mashed sweet potatoes looks delicious.
