<p>Here&#8217;s a fabulously healthy and easy dinner for your family that comes together in no time for any night during a busy week. A creamy spinach mixture spread onto thin flounder filets rolled up  and baked to perfection in under 30 minutes!</p>
<p>Do you need to fry fish in order to get your family to eat it? If that&#8217;s the case, as it is in my house, you will be pleasantly surprised when they gobble this meal up. All 3 of my picky kids ate it all!</p>

<p>Ingredients</p>
<ul>
<li>1 tablespoon olive oil</li>
<li>1 garlic minced</li>
<li>1 cup diced onion</li>
<li>1 (10 ounce) package frozen, thawed chopped spinach</li>
<li>1 teaspoon salt, divided</li>
<li>1/2 teaspoon pepper, divided</li>
<li>1 lemon zest</li>
<li>10 flounder filets (about 2 pounds)</li>
<li>4 ounces fontina cheese</li>
</ul>
<p>Directions</p>
<p>In a saute pan heat oil, add garlic and onion and cook until onion is translucent. Add in spinach, 1/2 teaspoon salt, 1/4 pepper and lemon zest. Stir in fontina cheese until melted. Set aside. Preheat oven to 350 degrees. Season flounder filets with remaining salt and pepper. Spray a 9 by 13 baking dish with nonstick cooking spray. Lay each filet onto dish. Spread spinach cheese mixture evenly onto each filet and roll up. Set each filet seam side down in baking dish. Bake 20-25 minutes or until fish flakes easily with a fork.</p>
