<h2 class="wp-block-heading">WHAT IS FATHEAD DOUGH?</h2>



<p>FatHead dough was made famous by the the movie,&nbsp;<a href="https://amzn.to/3xw21Jx" target="_blank" rel="noreferrer noopener">Fathead</a>. </p>



<p>The movie doesn&#8217;t actually mention anything about the pizza dough and really it only became popular in the low carb space after&nbsp;<a href="https://cookyscreations.blogspot.com/2012/06/holy-grail-of-ketolow-carb-pizza-crust.html" target="_blank" rel="noreferrer noopener">Cooky&#8217;s Creations</a>&nbsp; blogged about a “Holy Grail of Low Carb Pizza Crust” recipe in 2012.</p>



<p>Unlike the classic Fathead dough made with almond flour, my dough is made with coconut flour and honestly I don&#8217;t want to toot my own horn, but it&#8217;s pretty perfect in the ability to make you feel like your biting into a fluffy high carb roll! </p>



<p>It also makes a perfect dessert for a buttery crust in our keto version of a cheese danish.</p>



<p>The original method for making this fathead dough combines cream cheese and mozzarella in a bowl, melts them together and then you have to work really hard combining the dry ingredients together. </p>



<p>The dough is pretty simple and doesn&#8217;t require any yeast or flour!</p>



<p>I created a quicker and easier method for making this dough, just read below for my new method.&nbsp;</p>

<h2 class="wp-block-heading" id="isPasted">LOW CARB SWEETENER Options</h2>



<p>You can always sub the sweeteners for whatever you like to use, but that being said, you&#8217;ll have to take a good guess on how much to use. 1/2 teaspoon of&nbsp;<a href="https://amzn.to/2zsrnMq">vanilla stevia</a>&nbsp;is about 1/2 cup of sugar in sweetness.</p>



<p>The first time I made this danish I chose&nbsp;<a href="https://amzn.to/2hgbgYh">Sukrin Fiber Clear Syrup</a>&nbsp;to mix with the cranberries.&nbsp;</p>



<p>I don&#8217;t recommend Sukrin anymore so you could use&nbsp;<a href="https://amzn.to/31bN041" target="_blank" rel="noreferrer noopener">liquid Allulose</a>&nbsp;or&nbsp;<a href="https://amzn.to/3D1OhaR" target="_blank" rel="noreferrer noopener">Lakanto maple syrup.</a>&nbsp;</p>



<p>I tried this first using frozen cranberries and mixing it was difficult. I recommend fresh instead, but if you only have frozen, just thaw first then fix with the syrup.</p>

<p>This danish is just one of those recipes that is perfect if you&#8217;ve got some overnight guests. Easy to make, but&nbsp;more special than a traditional breakfast of bacon and eggs.&nbsp;</p>

<h2 class="wp-block-heading">CAN I SWAP THE CRANBERRIES?</h2>



<p>If cranberries aren&#8217;t your favorite, swap them for raspberries, blueberries or blackberries which would be just as delicious. You could even use <a href="https://www.sugarfreemom.com/recipes/low-carb-keto-raspberry-chia-jam/">sugar free jams</a> or <a href="https://www.sugarfreemom.com/recipes/low-sugar-cranberry-orange-jelly-sauce/">keto cranberry sauce.&nbsp;</a></p>



<p>But if you&#8217;re looking for a Christmas breakfast this would be my choice!</p>



<p>My oldest son, is pretty picky and even he said, &#8220;Tastes like a traditional danish Mom, it&#8217;s super good!&#8221; I&#8217;ll take that as a win!</p>

<h2 class="wp-block-heading">SUGAR FREE CREAM CHEESE ICING</h2>



<p>The cream cheese drizzle is of course totally optional, but truly puts this over the top!</p>



<p>It&#8217;s so tasty you&#8217;ll be tempted to smear it all over your face, I mean&#8230;&#8230;slice. </p>



<p>It&#8217;s very simple to make as you just add all the ingredients for the icing into your blender, that&#8217;s it!</p>

<h2 class="wp-block-heading">HOW TO MAKE KETO CREAM CHEESE DANISH</h2>



<h2 class="wp-block-heading">Make the Nut Free Fathead Dough</h2>



<p>Preheat the oven to 400 degrees F.</p>



<p>Try my New easier method for making fathead dough: Place all ingredients into a food processor and process until combined. Remove and place into a microwavable bowl and microwave for 2 minutes or double boiler to melt mixture over low heat on the stove. Stir again to combine.</p>



<p>Line a baking sheet with parchment paper and roll out the dough to an oval shape. You can wet hands and flatten the dough or place another piece of parchment over the dough and use a rolling pin. Set aside to make filling.</p>



<h2 class="wp-block-heading">Make the Cheesecake Filling</h2>

Add cranberries to a small bowl and mix with <a href="https://amzn.to/4gwR0O6">low carb syrup.</a></span></p>

Allow to cool then refrigerate.</span></p>



<h2 class="wp-block-heading">Optional Icing</h2>

<p> It&#8217;s all about that cheese and filling in this cheeseburger calzone! Biting into a sinfully tasty carb-like laden cheeseburger stuffed into a calzone! But it&#8217;s not high carbs!</p>



<p>Cheesy and meaty, but it is NOT, I repeat NOT traditional bread dough or pizza dough, not carb-y and certainly not sinful either!</p>

<h1 class="wp-block-heading">KETO NUT FREE FAT HEAD DOUGH</h1>



<p>The low carb calzone is made from&#8230;.wait for it&#8230;&#8230;&#8230;&#8230;..MOZZARELLA CHEESE! My own version of the famous fathead dough, but I use coconut flour since I can&#8217;t use almond flour since my son has a tree nut allergy.&nbsp; I first published this recipe in April of 2015, but updated it with a video for you!</p>



<p>Since I made this dough I&#8217;ve used it for not only savory but sweet recipes like my <a href="https://www.sugarfreemom.com/recipes/low-carb-fat-head-cheese-danish-sugar-free-nut-free/">Cheese Danish!</a> I&#8217;ve made a <a href="https://www.sugarfreemom.com/recipes/low-carb-grain-free-chicken-parmesan-calzone/">Chicken Parm Calzone</a> and <a href="https://www.sugarfreemom.com/recipes/low-carb-pizza-pockets-grain-free-nut-free/">Pizza Pockets</a> too!</p>



<p>Have you fallen off your chair yet? How is it possible? Well when I made my <a title="Grain Free Nut Free Low Carb Pizza" rel="noopener noreferrer" href="https://www.sugarfreemom.com/recipes/grain-free-nut-free-low-carb-pizza/" target="_blank">Grain Free Low Carb Pizza Dough</a> I knew this calzone had to happen. </p>



<p>I have a very old, back at the start of my blog, <a title="Whole Wheat Bacon Cheeseburger Calzone" rel="noopener noreferrer" href="https://www.sugarfreemom.com/recipes/whole-wheat-bacon-cheeseburger-calzone/" target="_blank">Whole Wheat Cheeseburger Calzone</a> (you can look and go laugh at the pics) &nbsp;that I knew could be adapted and remade into a low carb pizza crust. </p>



<p>And we were not disappointed. My family in fact was in awe!</p>

<h2 class="wp-block-heading">What is Fat Head Dough? </h2>



<p>I&#8217;m not the first one to create this type of pizza dough. The original recipe was called<a rel="noreferrer noopener" href="https://www.fathead-movie.com/index.php/2013/06/30/weekend-bonus-the-older-brothers-oldest-sons-faux-carb-pizza/" target="_blank"> Fat Head Pizza.&nbsp;</a></p>



<p>The orginial fat head dough used almond flour, cream cheese and mozzarella, and it was genius! But when you have a child with a nut allergy, making anything with almond flour is an issue, so I use coconut flour and I think it works fabulously!&nbsp;</p>



<h2 class="wp-block-heading">Is Fat Head Dough Keto?</h2>



<p>Yes, fathead dough made from cheese and low carb flour is keto friendly and very low in carbs making it ideal for either a ketogenic diet or low carb diet or anyone looking to reduce blood sugar spikes.</p>

<p>Obviously you must start with the keto pizza recipe in order to make the low carb cheeseburger calzone, but that is a pretty quick low carb dough recipe in itself.  In less than an hour, or dare I say even 30 minutes if you have kids who can help, &nbsp;you can have this keto cheeseburger calzone on the table.</p>



<p>I think you&#8217;ve probably noticed I forgot the crispy bacon in the recipe. But I want it in there! And it should be in there! &nbsp;Because &#8230;..you know it&#8230;&#8230;everything is better with bacon!</p>

<p><strong>Mozzarella cheese</strong>&#8211; shredded</p>



<h3 class="wp-block-heading">Directions</h3>



<p>Prepare the pizza dough on a parchment lined 9 by 12 inch baking sheet pan, but DO NOT precook it as you would for the pizza recipe. Spread the dough as far along the edges of the pizza pan as you can.</p>



<p>Pre-heat oven to 400 degrees F.</p>



<p>Place the bacon on a baking sheet pan and cook for 20 minutes or until crisp. Once cooled, break into pieces.</p>



<p>Increase oven temperature to 425 degrees F. Place the ground beef in the large skillet on medium-high heat and cook until browned and no longer pink. You can remove excess grease if you prefer.</p>



<p>Add all the rest of the ingredients to the meat mixture and cook until cheese is melted and combined well. Add the bacon and stir to combine.</p>



<p>Spread the filling down the center of the pizza dough.</p>



<p>Hold the edge of the parchment to lift one side of the dough and fold dough over on top of the filling as far as you can bring it.</p>



<p>Fold the other half over and seal closed simply press edges of dough with wet fingers to close together.</p>



<p>Bake for 20-25 minutes or until deep golden brown.</p>



<p>Let cool out of the oven 10-15 minutes before slicing.</p>

<h2 class="wp-block-heading">RECIPE UPDATE</h2>



<p>I&#8217;ve updated this recipe in June 2021 to make it a bit quicker and easier. The orginial recipe cooked the bacon in a skillet and then cooked the ground meat in the same pan. </p>



<p>I&#8217;ve changed the recipe to bake the bacon instead and while that is cooking you can brown ground beef.</p>



<p> I&#8217;ve also changed the fat head dough to be made quicker in the food processor and then&nbsp; heat to melt it all together making it much easier to form the dough. Nutrition Facts below do not include optional dips or sauces.</p>

<p>My kids are foodies just like their momma! They know good food and they enjoy most everything I make for dinner at our house. Feeding my family organic ingredients as well as enjoying a lower carb life style is one of my priorities as a mother.</p>



<p>While my kids still enjoy plenty of carbohydrates, I often lean them toward a low carb life style simply because I believe it to be one of the best. Since I&#8217;m on a low carb diet, I serve one dinner meal and that is it. I&#8217;ve developed the &#8220;take it or leave it&#8221;, this is what&#8217;s for dinner method and it works like a charm in my home.</p>

Using their delicious milk that my kids love makes it easy to create wholesome, delicious dinners. Alfredo sauce is a much loved favorite in my house. You can use whatever pizza dough you want but if you&#8217;ve never tried my <a href="https://www.sugarfreemom.com/recipes/grain-free-nut-free-low-carb-pizza/">low carb mozzarella dough</a>, I would highly suggest it. The family will never notice it&#8217;s low in carbs and good for you. Seriously if it can pass my picky family testers, it will for yours.</p>

<p>Once the dough is precooked the rest comes quickly. I used cooked chicken I all ready had or buy a rotisserie chicken to make life a little easier. The Alfredo sauce comes together in minutes on the stove. Topped with some favorites like bacon and scallions and this hearty meal just needs a <a href="https://www.sugarfreemom.com/recipes/caprese-zucchini-noodle-pasta-salad/">beautiful side salad </a>to finish it off.</p>

<p>My kids love anything with the name &#8220;pizza&#8221; in it. I&#8217;ve got a new favorite way to make all the things they love like calzones, pizza and now even these awesome pizza pockets! I&#8217;ve even got some sweet recipes planned for this fabulous, mozzarella dough typically called Fat Head Pizza Dough.</p>

<p>The original Fat Head Pizza dough using almond flour sounds wonderful, but any recipes that have almond flour, unless it&#8217;s just for me, can&#8217;t be enjoyed in a house with a tree nut allergy kid like my youngest.</p>

<p>So I&#8217;ve had to get pretty friendly with a not so easy to work with partner, COCONUT FLOUR.</p>



<p>It can be so fickle to work with, especially in desserts, but slowly I am getting the hang of transforming many recipes to low carb using it, as I am quite limited on my options.</p>

<p>I&#8217;ve also been getting pretty fond of using sunflower seeds as a low carb flour choice and even sesame and pumpkin.</p>



<p>But today it&#8217;s a pizza dough and you might think it weird it has coconut flour in it, but I must tell, my youngest hates with a passion all things that even remotely have a hint of the flavor of coconut. If he can taste &nbsp;it, he won&#8217;t eat it again. THIS does not in any way taste coconut-y so do not be scared. The mozzarella cheese and the Italian seasonings I&#8217;ve used resemble everything a tasty dough should have.</p>

<p>My family ate all of these up for lunch one day. I was lucky enough to keep a few long enough to get some pictures, after I was done the rest were finished off. They are even good room temperature!</p>
