<p>This day was actually a Sunday before the 4th of July that the hubby and oldest were camping with the scouts and just returning that evening. They brought home an unexpected present of LOBSTER! I didn&#8217;t mind! You&#8217;ll see since he and the oldest picky child were away I made life simple and ate simple. 🙂</p>

<p>We then had a dance recital for my daughter and after it she went over a friends house and my son was with his auntie so I came home and enjoyed some of my favorite new dip, <a title="Avocado Bean Dip {Dairy &amp; Nut Free}" href="https://www.sugarfreemom.com/recipes/avocado-bean-dip-dairy-nut-free/" target="_blank">Avocado Bean Dip</a> on sweet pepper slices!</p>

<p>In the afternoon I worked on a new delicious recipe that I haven&#8217;t posted yet because the frosting needs some tweaks, but I think you can guess what it is, but there&#8217;s a hidden veggie in it! Hope to post it soon!</p>

<p>Can you tell what this is from the looks of it? LOBSTER!! The hubby and son brought home a LOT of lobster and it was already cooked but the scouts didn&#8217;t eat all of it so they got to take it home, whoohooo! Yes that is mayo there but I don&#8217;t enjoy lobster every day either so&#8230;&#8230;.. I.Ate.Every.Bite.</p>

<p>I know seafood is wonderful and all but I was still hungry a little while later in the evening so I made a spinach and cheese quesadilla. Fast and just enough and I called it a day.</p>

I had 2!!</p>

<p>I&#8217;ve started adding 2 tablespoons of apple cider vinegar in my smoothies or salads, not daily though. Not sure if I see any positive benefits from it but I&#8217;m not being that consistent so&#8230;.. Anyone use the stuff?</p>

<p>My favorite snack is plain yogurt (I&#8217;ve been enjoying the Brown Cow brand, it is full fat but so good!) and fresh berries! Perfect after lunch snack!</p>

<p>For dinner I roasted a whole chicken with carrots, onions and potatoes and it was delish! I took the skin OFF that thigh, yes I did.</p>

<p>My after dinner, cleaning up the kitchen snack was my<a title="Light Berry Frozen Yogurt [No Sugar Added, Diabetic Friendly]" href="https://www.sugarfreemom.com/recipes/light-berry-frozen-yogurt-no-sugar-added-diabetic-friendly/" target="_blank" rel="noopener"> Light Berry frozen yogurt</a> I still had tucked away in my freezer. I scooped out a 1/2 cup and called it a night!</p>

<p><span style="text-decoration: underline;"><strong>Food Allergy Update:</strong></span></p>
<p>Yesterday I received a call from my doctor informing me of my blood test results. I was quite surprised that I don&#8217;t have a wheat allergy but am pretty sure I do. I&#8217;ve been off wheat/gluten since New Year&#8217;s and my stomach/digestive issues have disappeared! When he tested me though I was already without the gluten and wheat so I think my results are inaccurate. I also was surprised to find out I don&#8217;t have a milk allergy as I thought since I can;t stomach milk since I was a kid. Apparently the blood test doesn&#8217;t check for lactose intolerance which I am positive I have. I get sick immediately after consuming milk based soups or milk or too much yogurt or cheese in a day. Needless to say since New Year&#8217;s and being gluten free I&#8217;ve had a half cup of yogurt a day without any stomach aches so hmmmmm&#8230;&#8230;..</p>
<p>Another crazy surprise was the fact he told me I have a moderate to low egg allergy, specifically to egg whites&#8230;.WHAT????? I eat them daily, I drink them in smoothies, I bake with them and I don&#8217;t seem to have any issues after eating them, so again I say&#8230;.WHAT!!!!!</p>
<p>So now I&#8217;m not quite sure what I will do. I think I will continue gluten free eating until the end of this month and try some back and see if symptoms occur. After that I may decide to eliminate eggs for a short time and see what happens. I really love eggs and egg whites!</p>

<p>I really hope this won&#8217;t be a shock to you but sometimes I really don&#8217;t eat that balanced and this day last week was just one of those days. So ho&#8230;.. hum&#8230;&#8230; I am still showing you my not so great day of eating and I know you&#8217;ll notice I didn&#8217;t eat much.</p>
<p>I only know this: it is always busy in my life with the kiddies and most days I make better choices then others. Some days I eat too much and others not enough. This is one of those not so much days&#8230;&#8230;hey but I know you what judge right? pretty please 😉</p>

<p>Here&#8217;s my new protein green smoothie I was so excited to share with my kiddies but they burst my excitement with only one of three kiddies liking it, boo 🙁</p>
<p>I think the green color just freaked the other two out, but I will attempt again with them and I am totally sharing the recipe tomorrow so be sure to check back here for it!</p>
<p>but on a good note it was delicious and I saved the second serving in the fridge for a snack later&#8230;&#8230;.</p>

<p>&#8230;&#8230;.only it ended up being my lunch along with some cooked from the dinner the night before green beans and some &#8220;new to me&#8221; food called nutritional yeast!</p>

<p>Supposed to be a healthy alternative for adding protein for vegetarians and vegans, a great replacement for cheese too. I liked it, but I added some extra virgin olive oil over the beans too and it made the yeast less&#8230;&#8230;..dry 🙂</p>
<p>So a side note here, this green smoothie even after a few hours in the fridge was still just as thick and delicious as when I first made it earlier in the morning&#8230;&#8230;that is why it became my lunch for lack of making anything else really.</p>

<p>At least I ate an apple with it. No I didn&#8217;t finish the rest of the jar, but I sure thought about it and wanted to, but knowing that would be totally wrong I removed it from my sight and forgot all about it albeit taking one more spoonful.</p>

<p>So that was my day in a nutshell&#8230;&#8230;.hope you don&#8217;t think so terribly of me now but I am not going to show to anything but the truth here. This is after all accountability for me and hopefully next week I will share a more balanced eating day or not&#8230;.</p>
