<p>Chocolate and peanut butter is surely the most classic combo. I can’t think of a better combination for easy sugar-free popsicles on a hot day then pairing these two flavors together melted chocolate coated or drizzled in a&nbsp;<a href="https://www.sugarfreemom.com/recipes/chocolate-hardening-sauce-a-ka-magic-shell-no-sugar-added/">sugar free dark chocolate shell</a>!!&nbsp;</p>



<p>You really don’t even need to make these in molds, just eat them on a stick like ice cream bars. This is the perfect indulgence as regular ice cream served in a bowl, but obviously for portion control the popsicle idea is best. Either way this is a favorite summer dessert!</p>



<p id="isPasted">It’s like frozen fudge on a wooden stick!</p>



<p>Naturally my sweetener of choice is the &nbsp;<a href="https://amzn.to/2xWlp7z" target="_blank" rel="noreferrer noopener">Chocolate liquid stevia</a>&nbsp;from Sweetleaf! It’s the perfect amount for the chocolate layer flavor! It tastes fantastic and it blends well in non baking desserts! But feel free to use any low carb sweetener you enjoy to balance blood sugar.&nbsp;</p>

<p>This popsicle recipe takes just minutes to blend together in a high speed blender or food processor. The hardest part of course is waiting for the popsicles to freeze. Once frozen they are just delicious as is or remove them from the mold and coat with my&nbsp;<a href="https://www.sugarfreemom.com/recipes/chocolate-hardening-sauce-a-ka-magic-shell-no-sugar-added/" target="_blank" rel="noreferrer noopener">Sugar Free Magic Shell</a>&nbsp;for an extra special treat.</p>



<p>You could even make this into regular ice cream. Just blend in blender and instead of pouring into molds, add to your ice cream machine and let it do it’s thing. You’ll have soft serve in about 15 minutes, or a bit longer. I have an<a href="https://amzn.to/2JsaTua" target="_blank" rel="noreferrer noopener">&nbsp;ice cream attachment for my KitchenAid.</a></p>

<p>If you have a peanut allergy in the family, you can easily swap out the peanut butter used for almond butter or cashew butter or another nut butter. If you have a tree nut allergy, simply swap out the almond milk with coconut milk and use sunflower seed butter.</p>



<p id="isPasted">FUDGEY! CREAMY!! CHOCOLATEY!!</p>



<p>You can either just dip the tops of the popsicles or drizzle all over or spread the melted chocolate mixture on one side, let it harden for a minute than flip over onto the other side and coat the entire popsicle.</p>



<p>And super hard to take pictures of before they melt and I want to devour one!</p>

<p>If you don’t have chocolate stevia you can use vanilla or clear. If you don&#8217;t like stevia use any low carb sweetener you like. I also love Liquid Monk Fruit. Try a small amount of sweetener perhaps just 1/4 cup, taste and increase as needed before pouring into molds.</p>



<h2 class="wp-block-heading">What if I don&#8217;t want to make the Magic Shell?</h2>



<p>If you don’t want to make the&nbsp;<a href="https://www.sugarfreemom.com/recipes/chocolate-hardening-sauce-a-ka-magic-shell-no-sugar-added/">Sugar Free Magic Shell</a>&nbsp;to cover the popsicles they will be delicious even without it or you can use 1.5 cups Sugar Free Chocolate Chips and 2 tbsp coconut oil, melt together and dip frozen popsicles in that.</p>

<p id="isPasted">It&#8217;s A GIANT COOKIE made in a skillet! A cookie lovers dream, especially when sweet tooth cravings happen! No need to scoop a bunch of little chocolate chip keto cookies when you just make the entire cookie dough recipe and dump into an oven-proof skillet. Easy peasy!</p>



<p>You don&#8217;t even need to slice this delicious dessert! Everyone can just grab a spoon and dig in to the delicious warm cookie! Even better is when said low carb skillet cookie is gluten free, nut free, sugar free, and keto; that my friends is a sugar free lovers dream!</p>



<p>This is a perfect low-carb dessert for those with tree nut allergies like my youngest son. You can bring this giant chocolate chip cookie recipe to a party without worry of cross contamination.&nbsp;</p>



<p>Did you ever have this great intention to make something so decadent and delicious, but then it falls through and you&#8217;re left starting over?</p>



<p>Sometimes that happens with keto dessert recipes, but sometimes, it turns out better than that first intention. Such is the case with this recipe I&#8217;m sharing today.</p>



<p>As a busy mom, I&#8217;m always looking for simple dessert recipes, ones that take little effort in the kitchen but everyone loves and thinks you spent hours.</p>



<p>My orginial plan with this recipe was for the slow cooker. And in fact you could probably still make this in the slow cooker, but it doesn&#8217;t come out looking like this pie, more like bars instead.</p>



<p>The cast iron pan really creates that outer cookie crispness around the whole thing and the best part is that perfect gooey center.&nbsp;</p>



<p>After making this recipe twice in the slow cooker and doing some tweaks with the amounts of flour, I opted to try it a third time in a cast-iron skillet and I am so happy I did. Masterpiece right here!</p>



<p>The whole family was won over with the best keto chocolate chip skillet cookie they have ever had!</p>

<h2 class="wp-block-heading" id="isPasted">How to Make a Skillet Keto Chocolate Chip Cookie Recipe</h2>



<p>Preheat the oven to 350 degrees F.&nbsp;</p>



<p>Add your wet ingredients; unsalted butter, cream cheese, sour cream to a&nbsp;<a rel="noreferrer noopener" href="https://amzn.to/2ihxcmN" target="_blank">stand mixer</a>&nbsp;or large bowl and blend until smooth.&nbsp;</p>



<p>Add the sweetener, vanilla extract, stevia and cream to the mixer and blend until combined.&nbsp;</p>



<p>Taste and adjust sweetener if needed.</p>



<p>Add the remaining dry ingredients to the mixer, except the chocolate chips. Blend until incorporated then stir in the chocolate chips by hand.&nbsp;</p>



<p>Grease a&nbsp;<a rel="noreferrer noopener" href="https://amzn.to/2AIm0XE" target="_blank">9 inch cast iron skillet</a>&nbsp;and spread the batter into the skillet.&nbsp;</p>



<p>Bake in a preheated oven for 35- 40 minutes or until a toothpick in center comes out clean and it&#8217;s got a nice golden brown color.</p>



<p>Remove from oven and allow to cool for 20-30minutes before serving.&nbsp;</p>

<p>Perfect outer edges like a cookie would typically have and the center is all soft and is truly a gooey chocolate chip cookie. I mean this is truly perfection!&nbsp;</p>



<p>My entire family and even the picky hubby loved this so much!&nbsp;</p>

<p>Yes if you don&#8217;t have the sweetener I used, you can sub another low-carb brown sugar sweetener. <a data-type="link" data-id="https://amzn.to/3SvjPiU" href="https://amzn.to/3SvjPiU"> Monk fruit</a> is another great option. </p>



<p>I do not recommend coconut sugar as that is still a sugar and will spike ones blood sugar.&nbsp;</p>

<h2 class="wp-block-heading">Can I Swap Sesame flour with Almond Flour or Coconut Flour?</h2>



<p>One of the most common questions I get on a daily basis is about swapping different keto flours.&nbsp;</p>



<p>Yes, you can easily swap the sesame flour with fine almond flour in this recipe. You can not evenly swap sesame flour with coconut flour as you would need to use much less and increase all liquids, including eggs.&nbsp;</p>



<p>I&#8217;ve made this twice using sesame seeds instead of the&nbsp;<a href="https://amzn.to/2zHvxQD">sesame flour</a>&nbsp;and I must say the flour is better. The seeds while you can grind them in a blender, don&#8217;t provide a smooth texture as using the flour.&nbsp;</p>

These recipe round up collections of entrees, beverages, snacks and desserts are perfect  for weekdays, weeknights, weekends and any summer time outdoor parties! All of these collections can be found on Parade.com where I am a bi -weekly writer. Once you click over to the page you will find a gallery of recipes. Launch the gallery and it will open pics and links to all the recipes you could ever want for summer time! <p>Making homemade, sugar free whipped cream at home is something I&#8217;ve done for a long time using my KitchenAid stand mixer. But if you don&#8217;t have a stand mixer you can still make a fabulous whipped cream at home, in a MASON JAR!!</p>



<p>You can make this sugar free whipped cream with any choice of sweetener you prefer really. My preference is <a href="https://www.sweetleafstevia.com" target="_blank" rel="noopener">Sweetleaf Stevia</a> in vanilla creme. My kids and hubby prefer the <a href="https://www.swervesweetener.com" target="_blank" rel="noopener">Swerve sweetener</a>. Whichever you choose just add a small amount then taste and adjust to your liking.</p>



<p>It&#8217;s simple and easy and the kids can get involved as well!</p>



<p>Here&#8217;s a video to show you how simple it is to make this in a mason jar.</p>

<p>Of course if you have a stand mixer or a high powdered blender you can simply pour the ingredients into that and let it do the work for you!</p>

<p><em>Beef Stroganoff Cauliflower Casserole! A Hidden&nbsp;cauliflower&nbsp;casserole with all the&nbsp;traditional&nbsp;flavors of beef stroganoff ! Your family will&nbsp;have&nbsp;no idea they&#8217;re eating cauliflower nor will they care!</em></p>



<p>This classic recipe got a slight make over. Using a cauliflower base that looks more like a layer of mashed potatoes, topped with a layer of cheeses and a creamy beef mixture makes &nbsp;for a fabulous family meal that everyone will enjoy, even the kids.</p>



<p>This cauliflower idea as the base was adapted from my first recipe <a title="Bacon Cheeseburger Cauliflower Casserole" href="https://www.sugarfreemom.com/recipes/bacon-cheeseburger-cauliflower-casserole/" target="_blank" rel="noopener">Bacon Cheeseburger Cauliflower Casserole</a>. That recipe went over really well with not only my family, but many of you on my blog! My second recipe with the cauliflower base was also a big hit, <a title="Chicken Enchilada Cauliflower Casserole {Low Carb and Grain Free}" href="https://www.sugarfreemom.com/recipes/chicken-enchilada-cauliflower-casserole-low-carb-and-grain-free/" target="_blank" rel="noopener">Chicken Enchilada Cauliflower Casserole</a>. So I decided to try the classic beef stroganoff and instead of egg noodles use this fabulous hidden cauliflower recipe as the base.</p>



<p>While it certainly might not be typical to include cauliflower in any of the recipes I&#8217;ve made, it does make for a quite a unique dish and one that just might get your family to try cauliflower without realizing it.</p>

<p>What can I say, I&#8217;m just a sucker for recipes that hide veggies! I&#8217;ve got a bunch of recipes like this because it works for my kids. I love to see the surprised looks on their faces after I tell them what they just devoured and loved!</p>

<p>It&#8217;s a layered mess, but it works!!! Even my picky hubby, the Meat -N-Potatoes Man, was won over each time, never complaining and in fact complimenting, the cauliflower as the base on each recipe!</p>

<p>Grated Parmesan is optional but it does give a nice little toasted crumble over the top. I would highly recommend using it.</p>
