I refrigerated a can of trader joes organic coconut milk. I came out with something a little different.
on the bottom of the can was more than an inch of a hard solid mass with a yummy coconut flavor that seems mostly like coconut oil. the rest of the can was a quite sweet coconut milk. No cream at all. Isnt the fat supposed to float???

Thanks for the helpful info. I have used coconut oil in place of butter in baking and have had good results. I have never used the coconut milk or butter, but will look for them. If any of you have an Aldi in your area, they have wonderful, organic, cold pressed, unprocessed Coconut Oil for 4.99. I live at least an hour from any large city that has Trader Joes or Whole Foods. But I purchase a lot of products on line from Amazon or other retailers. I am looking forward to trying some of the items you suggest, Brenda. I am still waiting for my cookbook to get here. I will be so exited when it does. Thanks again.

No, they are different parts of the coconut. B but if you were to emulsify that coffee in a blender you'd have one of my favorites called bullet proof coffee (the vegan version)

No...not the same at all! That is more for cereal or when a more liquid form is needed. It cannot be whipped an does not perform the same. However, in a pinch you could use that milk with some coconut oil added in say a cake recipe (or something liquidy like a curry sauce) that called for the canned stuff. I'd s tablespoon or so per cup

You can also make it for much cheaper...just buy unsweetened shredded coconut and depending on the type and power of your kitchen gadget (food processor, blender, high speed blender) you can have amazing coconut butter in as little as 10 minutes (high powered blender) it could take up to an hour of start, stop, scrape, repeat (regular blender). It takes time but is far less expensive! :)

So are coconut milk/cream/butter all basically oil, just with different levels of solidity? Did you use the entire can with the liquid at the bottom? If so then it might not work for you. But if you did not use the liquid at the bottom and just the "cream" solid stuff from the top half of the can you should be able to place it back in the fridge uncovered and it should thicken for you. Let me know!
