Mayo Free Avocado Cole Slaw

Ingredients

  • 14 ounce bag precut coleslaw
  • ¼ cup chopped red onion
  • ¼ cup freshly chopped cilantro
  • 2 limes juiced or ¼ cup
  • 1 tablespoon white vinegar
  • 2 tablespoons extra virgin olive oil
  • ¼ teaspoon liquid lemon stevia
  • ½ teaspoon salt
  • ¼ teaspoon pepper
  • 2 ripe avocados mashed or ½ cup

Instructions

  • Place coleslaw, onion and cilantro in a large serving bowl.
  • In a small bowl, whisk the lime juice, vinegar, oil, stevia and salt and pepper.
  • Stir the mashed avocado into the dressing ingredients.
  • Once all incorporated, taste and adjust seasonings or sweetener if needed.
  • Toss with coleslaw in the large bowl and chill for an hour before serving.
