Instructions
Preheat oven to 400 degrees F. Grease a 9 by 13 baking dish with olive oil or avocado oil cooking spray. Set aside.
Add oil and ground beef to a large skillet and brown on medium-high heat.
Once done cooking ground beef and it's nicely browned, reduce heat to low and add chopped garlic and seasonings. Stir together then add in the cream cheese and salsa and continue to stir until cream cheese is well combined and no lumps. Spread this meat mixture evenly in the baking dish.
In a large bowl whisk eggs, heavy cream and 1 cup shredded cheese. Pour this over the meat mixture. Top with remaining cheese.
Cover and bake in preheated oven for 20 minutes. Remove cover and broil for 4-5 minutes until the cheese is nicely browned.
Enjoy immediately with optional favorite toppings.
Storage: Cover casserole with aluminum foil and refrigerate for up to 3 days or place in an airtight container and freeze for up to 3 months.
