Low Carb Keto Cottage Cheese Strawberry Mousse

Ingredients

  • 1 cup cottage cheese
  • 1 cup strawberries or 128 grams
  • ¼ cup heavy cream
  • 1 scoop collagen peptides (27 grams)
  • 1 teaspoon gelatin
  • 3 tablespoon water

Optional

Instructions

  • Add cottage cheese and strawberries to a high powered blender or food processor, blend until smooth.
  • Add gelatin powder and water in a small bowl and heat until dissolved. Set aside.
  • Add heavy cream, collagen and optional ingredients to the blender and blend until smooth. Taste and adjust sweetener.
  • Drizzle in gelatin and blend once more until incorporated.
  • Pour into 4 serving glasses and refrigerate for at least 1 hour or more.
