Sugar-Free Brownie Cake Pops {Grain & Gluten Free}

Ingredients

  • 1 recipe Flourless Chocolate Brownies

Instructions

  • Make brownie recipe and allow to cool then crumble in a large bowl. Set aside.
  • To make frosting, whip cream, vanilla extract and liquid stevia in a stand mixer until peaks form.
  • In a sauce pan over low heat, melt baking chocolate and butter then whisk in cocoa powder until incorporated.
  • Slowly blend into whipped cream.
  • Stir chocolate frosting into crumbled brownie mixture until all combined.
  • Form into balls on parchment lined baking sheet. Stick a lollipop stick into each and refrigerate for 30-60 minutes.
  • Once hardened, melt dipping chocolate in the microwave at 30 second intervals until melted and stir until completely smooth.
  • One at a time, dip into melted chocolate, tap slightly to remove excess chocolate then stand in Styrofoam or hang on a dish rack until set.
  • Add sprinkles of coconut sugar before they set.
  • Wrap individually for gift giving!
