Blueberry Breakfast Strata

Ingredients

  • 6 eggs slightly beaten
  • ½ cup cottage cheese 4% milkfat
  • 1 cup milk 1%
  • juice of 1 orange or ¼ cup
  • 1 teaspoon vanilla extract
  • ¼ teaspoon salt
  • 10 half full droppers liquid vanilla stevia
  • 6 cups cubed hearty whole grain or gluten free bread
  • 1 15 ounce bag frozen wild blueberries

Instructions

  • In a bowl whisk together the first 7 ingredients to combine.
  • Add bread and toss gently.
  • Pour in berries and gently combine well.
  • Place mixture into a 2-2.5 quart baking dish, cover and place in refrigerate for 2-12hours.
  • Preheat oven to 350 degrees.
  • Bake 40 minutes or until the top is golden brown.
  • Let stand 5 minutes before serving.
  • Top with yogurt if desired.
