Low Fat Crock Pot Taco Soup

Ingredients

  • 1 pound 93% lean ground turkey
  • 1 tablespoon olive oil
  • 1 teaspoon minced garlic
  • 1 cup chopped onion
  • 1 can 28 ounces crushed tomatoes
  • 1 can 15.5 ounces black beans, drained, rinsed
  • 1 can 15.5 ounces pinto beans, drained, rinsed
  • 1 cup mild salsa
  • 2 cans 10 ounces diced tomatoes with green chili's
  • 1 tablespoon taco seasoning
  • 1 teaspoon cumin
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon chili powder
  • ½ teaspoon pepper
  • 1-2 cups water to thin out to liking
  • Optional Toppings: Shredded cheddar cheese scallions, sour cream, tortilla chips, avocado

Instructions

  • In a large saute pan, add oil, garlic and onion and cook until softened.
  • Add turkey and cook until browned.
  • Add all remaining ingredients into crock pot.
  • Cook on low 4 hour- 6 hours.
  • Use water to thin out soup if desired.
  • Add optional toppings and enjoy!
