Mayo Free Cheesy Spinach Dip with Veggie Kabobs

Ingredients

  • 2 teaspoons olive oil
  • 1 clove garlic chopped
  • 4 cups fresh spinach
  • ¼ teaspoon salt
  • 1 cup ricotta cheese part skim
  • 4 ounces cream cheese
  • ¼ cup Parmesan cheese
  • 1 cup broccoli fresh, crowns
  • 1 cup cucumbers fresh, sliced
  • ½ cup yellow squash sliced
  • ½ cup cherry tomatoes

Instructions

  • Heat oil in saute pan and add garlic, spinach and salt.
  • Saute until wilted. Set aside.
  • In a blender add ricotta cheese and Neufchatel and blend until smooth.
  • Add cooled spinach and Parmesan cheese and pulse 5-7 times until all ingredients are incorporated. Do not over blend.
  • Makes about 1 ¾ cups.
  • Serve or refrigerate.
