Slow Cooker Tahini Chicken Thighs

Ingredients

  • 8 boneless, skinless chicken thighs about 1.5 lbs
  • ¼ cup tahini
  • 3 tablespoon extra virgin olive oil divided
  • 3 tablespoon water
  • 2 teaspoon lemon zest
  • 2 tablespoon lemon juice
  • 2 cloves garlic minced
  • 1 shallot grated
  • ½ teaspoon salt

Instructions

  • Pour 1 tablespoon of oil into the slow cooker then lay the chicken thighs in. Sprinkle with salt and pepper. 
  • Whisk the tahini, the remaining oil and remaining ingredients together and pour over the chicken thighs.
  • Cook on high 4 hours or low 8 hours.
  • Sprinkle with fresh chopped parsley if desired.
