Keto Iceberg Wedge Salad

Ingredients

  • 1 head iceberg lettuce cut into 4 wedges
  • ½ cup tomato diced
  • ¼ cup red onion diced or 25 grams
  • 4 ounces pancetta  or bacon, chopped, cooked crisp
  • Keto blue cheese dressing- see below

Keto Blue Cheese Dressing

  • ¾ cup  mayonnaise
  • ¼ cup sour cream
  • 1 tablespoon white wine vinegar
  • 2 tablespoon lemon juice
  • 1 teaspoon  garlic powder
  • 1 teaspoon Worcestershire sauce
  • ½ cup crumbled blue cheese
  • 2 tablespoon chopped chives

Instructions

  • Place each iceberg wedge on a serving plate. Set aside.
  • Make the dressing by whisking the first 6 ingredients together then stir in blue cheese and chives. Taste and adjust if you need to add salt and pepper. Top each wedge with ¼ cup dressing.
  • Evenly distribute the tomato, onion and pancetta over each wedge. Serve immediately.
