Preheat oven to 250 degrees F. Lay parchment paper on two large baking sheet pans.
Combine the Swerve brown sugar sub, pepper and salt together in a small bowl. Sprinkle ribs with rub on both sides.
Lay another piece of parchment paper over the ribs. Cover pans tightly with aluminum foil. Bake for 2 hours.
Increase temperature to 325 degrees F. Remove ribs from oven then remove foil and parchment paper. Remove cooking liquid/fat from each baking sheet pan and pour into a small sauce pan. Set aside for now. Place ribs back in the oven and cook uncovered for another hour or until tender.
Add Sugar Free BBQ sauce to the sauce pan with cooking liquid and cook over medium heat to bring to a simmer, stir until combined and heated through, about 5 minutes. Set aside.
Once ribs come out of the oven, brush both sides with BBQ sauce, grill or broil until deep brown and shiny, about 5-8 minutes. Enjoy!
Make Ahead: Ribs can be made up to 3 days ahead, cool, refrigerate then make BBQ sauce when you are ready to eat them.
Storage: Store in an airtight container for up to 3-4 days.
