I would think you might need to skip this recipe all together and try another. If you don't need it low carb you can try this one with gluten free flour, https://www.sugarfreemom.com/recipes/chocolate-chip-cookie-dough-truffles-gluten-free-refined-sugar-free/

What can I use to replace the pumpkin puree? I hate it, I can't digest it and I get severe hives if I do. Bananas are not an option, any beans (like black or chickpeas) are not an option and avocados are hard to get where I live in the UK. Any ideas?

Does anyone have suggestions for softening the coconut butter?
I admire you for doing so much for your children, Mine are grown and pretty much gone now, but made sure they were involved in lots of things by being involved also. Plus I made sure that EVERY Saturday was Family Day, where we would go to someplace new and special, Zoos and festivals when they we small and Museums, gardens and exhibits when they we older. Mine still ask me to go to a special exhibit or gallery with them if something new is in town. One is a scientist and one is an artist... I think I did a dandy job and so are you!
Oh and thanks for the great recipes which is making it easier for my hubby and I to stay low carb!
