Low Carb Portobello Pizzas

Ingredients

  • 4 Portobello mushroom caps stem removed
  • 2 tablespoons extra virgin olive oil
  • ½ teaspoon salt
  • pepper to taste
  • 4 tablespoons marinara sauce
  • 1 cup shredded mozzarella cheese
  • 1 cup cherry tomatoes sliced
  • 1 ounce turkey pepperoni cut into fourths
  • fresh basil

Instructions

  • Heat your broiler or outdoor grill.
  • Drizzle olive oil over both sides of mushroom caps. Sprinkle with salt and pepper to taste.
  • Broil or grill 5 minutes on each side.
  • Top each cap with 1 tablespoon tomato sauce, ¼ cup of cheese, ¼ cup of sliced tomatoes and evenly divide up pepperoni to each.
  • Broil or grill 2-3 minutes until cheese is nicely melted.
  • Top with fresh basil if desired.
