Caramelized Onions

  • Heat the oil in a large skillet over medium heat. Add the onions and cook, stirring occasionally, until soft and caramelized, about 15 minutes. Add the garlic, salt and pepper, cook another minute then remove from pan and set aside.

Burgers

  • Place the beef into a large bowl and mix together with the salt, pepper, chili, and mayonnaise. Divide the beef into 6 portions. Shape into a 6 inch long rectangular patty.
  • Heat the oil in the same skillet used for the onions over high heat. Once you see the oil shimmer, put the burgers in the pan and cook until browned on the bottom, about 4-5 minutes. Flip over and continue to cook until desired doneness. For medium, cook another 3-4 minutes.
  • If using optional gruyere cheese, place one slice over each burger at the last minute of cooking time. Cover, wait about 30 seconds, lift lid and check if cheese is melted, if not cover again for another 10-15 seconds.

Au Jus

  • Whisk the Au Jus ingredients together in a small sauce pan over medium heat. Cook about 5 minutes to warm through. Keep on low heat until ready to serve the burgers.

Assemble

  • Place one burger on the bottom of the toasted sub roll. Top with caramelized onions and any other burger toppings you like. Cover with top roll. Serve with warm Au Jus on the side for dipping.

Notes

Serving size is a 6 inch sub roll, one burger, 3 ounces caramelized onion and ⅓ cup Au Jus.
