This is an easy hot lunch. Air-fry for a super quick high-protein meal. The oven is nearly as fast! This recipe is versatile too. Don’t like salmon? Replace it with canned tuna (packed in water) or 5 ounces cooked chicken.

Ingredients

  • 5 ounces canned salmon or tuna or chicken
  • 1/4 cup pork rind panko
  • 1/4 cup cheddar cheese
  • 1 large egg
  • 1 tsp lemon juice
  • 1 tsp fresh chopped parsley

Instructions

  • If using the oven to cook the patties, preheat the oven to 425°F.
  • Put all the ingredients in a small bowl and stir to combine. Form patties making 2, each about ½ inch thick and 4 inches in diameter.

Air Fry

  • To air-fry the patties, place them in the air fryer basket in a single layer. Air-fry at 400°F for 5 minutes, carefully flip over, and air-fry for another 5 minutes, or until the edges are nicely browned.

Oven

  • To bake the patties in the oven, place them on a small rimmed baking sheet and bake for 10 to 15 minutes, until golden brown.

Optional topping

  • If desired, serve the patties with a dollop of tartar sauce, a sprinkle of fresh parsley and/or green onions/ scallions, and lemon wedges alongside.
  • Storage:  Store leftover salmon cooked patties in an airtight container in the fridge for up to 3 days.
