These easy baked chicken ricotta meatballs are moist, tender and packed with protein. With just 2 grams of carbs and 37 grams of protein per serving, they’re perfect for a keto, low carb or carnivore-style meal.
Preheat oven to 425 degrees F. Line a large baking sheet pan with parchment paper.
Mix the eggs with dry seasonings, ricotta cheese, pork rind crumbs and parmesan together in a large bowl. Once combined, mix in the ground chicken.
Use a large cookie scoop to make 28 meatballs. Place them on a parchment lined baking sheet pan.
Bake in the preheated oven for 20 minutes and internal temperature is 165 degrees F. You can broil them for a minute or two if you want them more browned. I served mine over egg white noodles and crispy bacon.
