These Low Carb Keto Cinnamon Roll Sheet Pan Pancakes bake all at once in a 9-by-13-inch pan and are topped with a sugar free sweet cinnamon swirl. This easy low carb breakfast is flourless, gluten free, nut free and high in protein.
Preheat oven at 325 degrees F and line a 9 by 13 baking dish with parchment paper or silpat or grease.
Place your egg whites in a stand mixer with vinegar and whip until stiff peaks. This should take about 10-15 minutes. Set aside.
Place the egg yolks in a blender with wet ingredients and then remaining dry ingredients and blend until incorporated and a smooth batter forms.
Fold your whipped egg whites in small batches into the egg yolk mixture being careful not to deflate whipped whites.
Pour this pancake batter into your prepared pan.
In a separate bowl, stir together the brown sweetener and cinnamon, adding only enough water to make a thick, spoonable cinnamon mixture. Drizzle it over the top of the pancakes and lightly swirl it through the surface.
Bake on the middle shelf of preheated oven for 25-28 minutes or until a toothpick or skewer stick in the center comes out clean. If using optional icing, mix together then spread over the pancakes.
Store in an airtight container in the fridge for up to 5 days or freeze for up to 3 months. Reheat by removing one or two from the freezer and microwaving for 30 seconds to 1 minute.
