Use a hand held mixerand pulse until the cauliflower is mashed.
Stir in remaining ingredients.
Taste and adjust seasonings.
Keep mashed cauliflower in slow cooker on warm until ready to serve.
Top with fresh chopped parsley if desired.
Notes
* If you don't have a slow cooker, simply steam the cauliflower in the chicken broth in a pot on the stove on low heat until fork tender.
