Peanut Butter Flax Single Serving Muffin

Ingredients

  • 1 tablespoon powdered peanut butter
  • 1 tablespoon coconut flour
  • 1 tablespoon ground flax seed
  • 1 egg
  • ¼ teaspoon baking powder
  • ¼ teaspoon ground cinnamon
  • ¼ teaspoon vanilla extract
  • 2 droppers full vanilla or plain liquid stevia
  • ¼ cup water plus 1 tablespoon

Instructions

  • Whisk all ingredients together.
  • Spray a 7 ounce ramekin with nonstick cooking spray.
  • Microwave for 2 minutes or bake at 350 degrees for 25 minutes or until a toothpick in center comes out clean.
  • Enjoy immediately!
