Cheesy Keto Airy Fryer Rolls (Nut Free, Gluten Free)
Servings 9 rolls
- 2 cups shredded mozzarella cheese
- 2 ounces mascarpone cheese or cream cheese softened
- 3 large eggs
- 2 ounces coconut flour or ½ cup or 58 grams
- ½ tablespoon baking powder
- ¼ teaspoon onion powder
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- optional butter to top each roll
Place mozzarella cheese, mascarpone and eggs into a stand mixer and blend with the paddle attachment. You could also use a hand electric mixer or mix in a bowl by hand.
Once well blended, add remaining ingredients. Blend until combined.
Spoon batter evenly into greased cupcake paper liners or silicone cupcake liners. Place the cupcake liners on the tray of the air fryer.
Set your air fryer to 350 degrees F. Close the door and set timer for 10 minutes. Open and add some butter on top of each roll, cook another 2 minutes.
Allow to cool 5 minutes before removing from cupcake liners and enjoy!
