Spring Roll Salad with Peanut Dressing

Ingredients

Peanut Dressing

Salad

  • 2 cups cabbage shredded
  • 2 cups zucchini shredded
  • 1 cup cucumber sliced
  • ½ cup sweet red pepper sliced
  • ½ cup carrot shredded
  • 2 cups cooked chicken breast shredded
  • cup scallions

Instructions

  • Place all the ingredients for the salad into a large serving bowl or platter.
  • Blend the dressing ingredients in a blender on the highest setting, until smooth. Taste and adjust sweetener if needed.
  • Toss dressing with salad and serve immediately. Keep refrigerated.
