Sugar Free Low Carb Keto High Protein Lemon Pudding
Super quick and easy to make, this lemon high protein pudding needs just 6 ingredients!

- 1/4 cup lemon juice and zest
- 1 tsp gelatin or agar agar, see content above
- 4 large eggs beaten
- 1 cup liquid egg whites beaten
- 1/4 cup unsweetened coconut milk or heavy whipping cream if you don't need dairy free
- 1 tsp lemon liquid stevia or your favorite low carb sweetener to taste
Pour lemon juice into a small bowl and sprinkle gelatin over the juice to bloom. Set aside.
Place your beaten eggs and egg whites into a large non stick skillet over medium high heat. Scramble until cooked through.
Place scrambled eggs and whites into a high speed blender or food processor.
Pour in the coconut milk, low carb sweetener and bloomed gelatin. Blend on high speed until smooth, no lumps. Taste and adjust sweetener if needed.
Pour into 3 -six-ounce serving jars and refrigerate, 2-3 hours or overnight. Optional topping; lemon zest and a teaspoon of canned coconut cream on top or some fresh berries if desired.
Storage: Keep in an airtight container until ready to serve for up to 3 days.
